Fresh Fruit Bunches (FFBs) are dense clusters of oil palm fruits, each containing 800–2,000 fruits, crucial for palm oil and kernel oil production. The entire palm oil mill process involves the reception of fresh fruit bunches from the plantations, sterilizing and threshing of the bunches to free the palm fruit, mashing the fruit and pressing out the crude palm oil. The crude oil is further treated to purify and dry it for storage and export.

FFBs are placed in large sterilizer chambers where steam is introduced to raise the temperature to 130°C to 145°C for 1-2 hours. This also loosens the fruits from the bunch. Palm fruit can easily separate from palm fruit bunches and become soft. Crude palm oil can be easily extracted from palm fruit due to its high humidity.
The oil extraction rate (OER) of the fresh fruit bunches, which is the quantity of oil that the mill can get out of the fruit bunches. The usual oil extraction rate for a ripe tenera bunch from a mature tree is between 22–24 percent, or 220–240 kg of oil per tonne of fresh fruit bunches.
